The first thing to sort out is which kind of kit you are looking at, because two very different products share the name. An equipment starter kit is hardware, typically built around a 6 gallon glass carboy with an airlock, siphon, hydrometer and bottling gear, and it contains no grapes at all. An ingredient kit is juice or concentrate with yeast and additives, sized to a batch, and it assumes you already own the vessels. Buy the equipment once and the ingredients repeatedly. Batch size is the next number and it converts cleanly: a 6 gallon kit yields about 30 standard 750 ml bottles, and a 1 gallon kit yields five, which is the honest choice for a first attempt where you want to learn the process rather than commit to a case and a half of something you may not like. Ingredient quality is where the price spread lives. Kits built on fresh varietal juice ferment to a fuller body, while 100 percent concentrate kits are lighter and need more bulk aging to lose a certain thinness; both make drinkable wine, and neither is fast. Plan on four to six weeks before bottling and months in the bottle for a red, and distrust any kit promising drinkable wine in a fortnight. Check whether a carboy is glass or plastic, since glass does not scratch or hold flavors but breaks, and confirm the kit includes a hydrometer, because fermenting without one is guesswork.
