The volume of starter tea shipped with a culture matters more than the size of the SCOBY itself, and it is the number to compare across listings. Starter tea is strongly acidic finished kombucha, and you need roughly a tenth of your batch volume of it to drop the pH below about 4.5 quickly enough that mold and stray bacteria never get a foothold. That is why cultures are sold matched to a batch: 12 ounces of tea for a one gallon brew, 6 ounces for a half gallon, and small quart-sized kits with correspondingly less. Buying a large disc with a token splash of liquid is the classic way to lose a first batch. Live versus dehydrated is the second decision. A live culture arriving wet in its own tea is ready to pitch and will usually finish a first batch in one to two weeks, while a dehydrated pellicle has to be rehydrated over several days and often needs two cycles before it produces drinkable kombucha, which is a fair trade only if shelf life matters to you. Physical appearance tells you very little: a thick brown mature pellicle and a thin new one both work, and the yeast strands hanging underneath are normal rather than a fault. Organic certification is worth having because the culture concentrates whatever is in the tea and sugar you feed it. What you should not pay extra for is a decorative jar or a flavoring pack, as the second ferment needs only fruit and time.
