Water chemistry
Adjusting the mineral content of brewing water with salts to suit a mash and match a target beer style.
Water chemistry refers to the mineral makeup of the water used for mashing and brewing, including ions like calcium, magnesium, sulfate, and chloride, which affect mash pH, enzyme activity, and the final beer's perceived balance between hop bitterness and malt sweetness. Two brewers using identical grain and hops can get noticeably different beers if their base water differs enough.
Brewers commonly adjust water by adding small, measured amounts of brewing salts, such as gypsum for sulfate or calcium chloride for chloride, based on a water report and a target profile suited to the beer style, since hop-forward styles often lean toward more sulfate and malt-forward styles toward more chloride. A reliable pH meter or test strips help confirm the mash is landing in the right range after adjustments, since minerals alone do not guarantee correct pH.
A common mistake is adjusting water blindly without knowing the starting mineral content, since adding salts on top of already high mineral water can push a beer too far in one direction. Another is treating water chemistry as necessary for every batch; many beginners get good results for a long time brewing with filtered tap water or a simple base water profile before fine-tuning salts becomes worthwhile.
