# How to Fix Flat or Over-Carbonated Homebrew Bottles

Bottle conditioning relies on yeast consuming a small, measured amount of sugar in sealed bottles to create carbonation. When the balance is off, bottles can remain flat after weeks or foam uncontrollably when opened. Over-carbonated bottles can even burst, so it is important to understand the causes and act safely.

## Flat bottles: be patient

Bottle conditioning usually takes two to three weeks at room temperature, around 68-72°F (20-22°C). Cooler temperatures slow carbonation, and stronger beers can take longer.

Move flat bottles to a warmer location and gently invert them to rouse yeast. Check one bottle again after another week before assuming a problem.

## Other causes of flat beer

Forgetting or under-measuring priming sugar, or not mixing it evenly, leads to flat or inconsistent bottles. Use a priming sugar calculator and dissolve sugar in boiled water before gently stirring into the beer.

Caps that are not sealing properly allow CO2 to escape. Inspect caps and bottle rims, and check your capper's adjustment. Very long cold crashes or high-alcohol beers may leave little healthy yeast, which may require adding bottling yeast.

## Gushing and over-carbonation

Bottling before fermentation is complete is the most common cause of over-carbonation. Confirm stable final gravity readings over several days before bottling.

Too much priming sugar and uneven mixing also cause some bottles to gush. Wild yeast or bacterial infections can continue fermenting sugars that normal yeast cannot, leading to gushers over time.

## Handle over-carbonated bottles safely

Over-pressurised bottles can explode. Wear eye protection and gloves when handling suspected bottle bombs, and move bottles into a closed box or cooler.

Refrigerating bottles slows yeast activity and reduces pressure build-up. Carefully venting and recapping bottles can release excess pressure, but safety should come first.

## Prevent carbonation problems

Measure priming sugar by weight, use sanitised bottles and caps, and bottle only when fermentation is complete. Consistent temperatures during conditioning help carbonation develop evenly.

Kegging and force carbonation provide more precise control if carbonation problems are frequent. A bottle filler and bottling bucket also help fill bottles consistently and reduce oxygen exposure.

## Keep records to find the pattern

Write down the final gravity at bottling, the priming sugar weight, the beer volume and the conditioning temperature for every batch. When carbonation goes wrong, these notes usually point straight to the cause, such as bottling too early or using a volume estimate that was too low.

If only some bottles in a batch gush or stay flat, the problem is more likely uneven priming sugar mixing, a poorly sanitised group of bottles or inconsistent capping. If the whole batch behaves the same way, look at fermentation completeness, sugar quantity and temperature.
